Healthy Chicken Tostadas!

I love Mexican food like most people, however I donโ€™t love the bazillion bowls with different toppings many Mexican dishes requires. Nor do I appreciate the mess. These Mexican shredded chicken tostadas can be on your weeknight dinner table in just 20 minutes!

Tostada is a Mexican dish traditionally made with deep fried tortilla, seasoned beans, meat and vegetables.

Not usually, but these are! Weโ€™re making healthy tostadas using super easy homemade tortilla shells. And the toppings are healthy because you have complete control over all the ingredients. You can add as many veggies and as little cheese as you like.

All ingredients are highly customizable in this chicken tostada recipe and I recommend you use what you have on hand. If youโ€™re shopping for this recipe, here are the ingredients I recommend.


8 corn tortillas or tostada shells
3 medium tomatoes, diced
4 medium avocados, diced
3 tbsp red onion, finely chopped
1/4 cup cilantro, finely chopped
1 tsp cumin
1 tsp chili powder
3/4 tsp salt
1 lime (juice of)
15 oz can black beans, drained & rinsed
3 cups shredded chicken
1/2 cup feta or Cotija cheese
Cooking spray

Crock pot cooked and shredded chicken breast is preferred. Grilled or baked chicken breast works great too. Store-bought roasted chicken is less healthy but an option when in a rush. Any boiled, baked, or grilled chicken breast will essentially work. Even leftover chicken is great for this recipe.

You can use store-bought tostada shells but be aware they contain artificial colors, hydrogenated oils, and are sometimes difficult to find organic. Itโ€™s not the end of the world if you use store-bought, but if you have time I highly recommend making your own โ€“ itโ€™s super easy and healthier!

1) Line large baking sheet with silicone mat or aluminum foil and arrange tortillas in a single layer. Spray with cooking spray and sprinkle with salt on both sides.

2) Bake at 400 degrees for 6 minutes per each side. They come out nice and crunchy!

While tostada shells are baking, make easy guacamole salsa by combining tomato, avocado, red onion, cilantro, cumin, chili powder, salt and lime juice. Get other ingredients ready.

To assemble tostadas, top each shell with guacamole, beans, chicken and cheese.
