Kale Salad With Meyer Lemon Vinaigrette (For Healthy Skin)

Perfect for a light lunch or side salad, this healthy recipe for total health and vibrant skin features kale, avocado, quinoa, pomegranate seeds, pecans, goat cheese, and a homemade Meyer lemon vinaigrette.

Leafy greens, especially kale, are high in antioxidants and vitamin Kโ€”both of which help the skin look young (antioxidants because they help slow down the process of aging, and vitamin K because it protects the skinโ€™s elasticity).

Pomegranate seeds boast super high levels of polyphenols (an antioxidant also found in cranberries).

4 cups chopped kale
1 avocado, diced
1/2 cup cooked quinoa
1/2 cup pomegranate arils
1/2 cup chopped pecans
1/4 cup crumbled goat cheese

1/4 cup olive oil
1/4 cup apple cider vinegar
3 tablespoons freshly squeezed Meyer lemon juice*
Zest of 1 Meyer lemon*
1 tablespoon sugar

*๐— ๐—ฒ๐˜†๐—ฒ๐—ฟ ๐—น๐—ฒ๐—บ๐—ผ๐—ป- They're sweeter and less astringent than run-of-the-mill Eurekas, with a thin, edible skin and a fragrance as floral as a bouquet of hyacinth.

If you canโ€™t find them at your market, a decent swap is to replace the juice (or zest) of 1 Meyer lemon, simply swap in the juice (...or zest) of 1/2 a tangerine and 1/2 a regular lemon.


1. To make the vinaigrette, whisk together olive oil, apple cider vinegar, lemon juice, lemon zest and sugar in a small bowl; set aside.

2. To assemble the salad, place kale in a large bowl; top with avocado, quinoa, pomegranate arils, pecans and goat cheese. Pour the dressing on top of the salad and gently toss to combine.

3. Serve immediately.
